Ben Vear reveals the secret to making perfectly balanced, wholesome ice cream which is simple and fuss-free, and which requires no expensive equipment and very little elbow grease. Replacing ingredients which have high water content for low-water alternatives prevents the formation of ice crystals, which removes the need for regular churning as the mixture freezes.
